You can set your task/activity dates in the edit form when updating a task.
This field will be quite different, depending on your provider. For Easy Projects, we have a dates dialog. For Redmine we have a simple dates field.
Note: There are key differences between Easy Projects and Redmine providers:
In Easy Projects, there is a pop-up (first image to the right), where you can change dates as you please and duration of task/activity. The fields adapt to your changes;
